Looking for an entree for dinner today? How about a Star Wars recipe called Stuffed Puffer Pig. This recipe is a bit more difficult than our last Star Wars Recipe. However, it is worth it! We loved this dish in our family.
Stuffed Puffer Pig Recipe Ingredients

- 2 pork tenderloins, about 1 1/2 pounds each
- 3 cups baby spinach, loosely packed
- 1 tart apple, cored and diced. Tart apples are Braeburn, McIntosh, Johnathan, Empire, and Cortland apples
- 1 fennel bulb, roughly chopped
- 1/2 teaspoon dried sage
- 1/2 teaspoon pepper
- salt
- 1 pound bacon
Stuffed Puffer Pig Directions
Step 1: Preheat the oven to 375°F.
Step 2: Slice the tenderloins lengthwise almost all the way through, leaving some left as a hinge, then pound it flat to about 1/4 inch to 1/2 inch thick.

Step 3: Combine the spinach, apple, fennel, sage, pepper, and salt in a food processor and puree until well combined.

Step 4: Spread the filling over the porks. Roll each tenderloin up and place it on a baking sheet lined with parchment paper, seam-side down.

Step 5: Working with 1 strip at a time, carefully wrap both tenderloins in bacon.
Step 6: Roast for around 25 minutes. If you’d like the bacon layer a little crisper, slide the roast under the broiler for 1-2 minutes.

We loved this entree in our family. The tenderloin was so juicy and the apple filling in the middle was delicious. Print the recipe out below or save for the future.
