Today we are sharing a soup, perfect for lunch or dinner for any Star Wars fans. This recipe is called Topato Soup. It is a spicy soup from the from the outer rim system of the galaxy. We even love the green color of this Star Wars soup.

Topato Soup Recipe Ingredients

- 1 tablespoon olive oil
- 2 to 3 cloves garlic, minced
- 1/2 medium yellow onion, diced
- 3/4 cup green salsa
- 1 cup of chicken broth
- 1 medium potato, peeled and diced
- 1 cup baby spinach leaves
- 1/2 cup of heavy cream, or more to taste
- salt
- pepper
Topato Soup Recipe Directions
Step 1: Heat the oil in a medium saucepan over medium heat. Add garlic and onion, then cook for a few minutes, stirring occasionally, until fragrant and soft.
Step 2: Add the green salsa, chicken broth, and potato. Cook for about 15 minutes, until the potato is fork-tender.

Step 3: Stir in the spinach for about 30 seconds, then puree everything in an immersion blender. It’s important to blend it a lot, as to not have chunks of onion or spinach.
Step 4: Add the cream, then season with salt and pepper to taste. Add more cream if it’s too spicy.

- 1/2 cup heavy cream You can add more if the soup is to spicy.

Instructions

- Add the salsa, chicken broth, and potato, then cook for about 15 minutes, until the potato is fork-tender.
- Stir in the spinach for about 30 seconds, then puree everything with an immersion blender or a blender. (It's important to fully blend it, unless you want a chunky soup)
- Add the cream, then season with the salt and pepper to taste, adding more cream if it is too spicy.
